Candies peel was known as braised meat. Untill someone discovered that this piece of meat, for example from the Black Angus, was very suitable to grill. It is called 'flat iron' because it is a flat piece from 1,5 to 2 centimeter.

Is it tender?

For sure! It's incredibly tender. The steak is less famous than for example the rib eye steaks or the entrecôte steaks and for that reason also cheaper. More reason to choose this steak!
