The primeval ham, or spoke ham, is internationally known as "pig wings". The pig wing is the pig's shank. A muscle that moves a lot and is therefore fairly stiff. When slowly cooking at low temperatures, this meat becomes wonderfully tender and has a delicious taste. It is often pickled in advance to make it even more tender!
