It is an elongated piece of meat derived from the shank portion (lower part of the fore and hind legs of the animal) without removing the bone, as that is where the key to its delicious flavor lies.
The name comes from the Italian "osso buco", which means "hollow bone". It is sliced and is not a cylindrical piece, but its thickness decreases at the bottom and increases at the top.
A very gelatinous piece of meat, ideal for roasts, stews, and making stocks.
