Ingredients
- 1.5 kg chicken breasts or chicken thighs
- 4 tablespoons olive oil
- 1 onion, finely chopped
- 3 cloves garlic, finely chopped
- 1 cup BBQ sauce of choice (our own BBQ sauce)
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar
- 1 tablespoon Worcestershire sauce
- 1 teaspoon smoked paprika powder
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Hamburger buns (brioche), for serving
Preparation
Here's how you prepare this recipe!
- 1. Mix olive oil, garlic powder, onion powder, smoked paprika powder, salt, and pepper in a bowl to create a marinade.
- 2. Rub the chicken breasts or thighs with the marinade and let them marinate in the refrigerator for at least 1 hour, preferably longer (4-6 hours or even overnight).
- 3. Light the BBQ or Kamado grill and preheat it to a temperature of about 175-180°C, indirect heat.
- 4. Place the marinated chicken breasts or thighs on the grill grate of the Kamado grill, away from direct heat.
- 5. Close the grill and let the chicken smoke and cook for about 1.5 to 2 hours, or until the internal temperature of the chicken reaches 75°C.
- 6. While the chicken is on the grill, prepare the BBQ sauce. Heat a pan over medium heat and add the finely chopped onion. Cook until soft and lightly browned, then add the garlic and cook for another minute.
- 7. Then add the BBQ sauce, apple cider vinegar, brown sugar, and Worcestershire sauce. Bring to a boil and simmer until the sauce has thickened slightly, about 10-15 minutes.
- 8. Remove the grilled chicken from the BBQ or Kamado grill and let it cool until you can handle it. Use two forks to pull the chicken apart (pulled chicken).
- 9. Mix the pulled chicken with the prepared BBQ sauce until the chicken is well coated with the sauce.
- 10. Serve the BBQ Pulled Chicken on hamburger buns or soft rolls. You can offer extra BBQ sauce on the side for enthusiasts.
