
Braised blade steak in its own gravy

Juicy beef, infused with flavors, slowly roasted on the grill, served in rich gravy with vegetables.
Ingredients
- 1 piece beef blade steak
- 2 pieces carrots
- 2 stalks celery
- 1 piece onion
- 8 pieces roseval potatoes
- 5 cloves garlic
- 3 sprigs thyme
- 3 dl red wine
- 3 dl veal stock
- Parsley
Preparation
- 1. Clean the blade steak, remove the membrane and fat, coat with olive oil, pepper, and salt, and grill until golden brown on all sides on the barbecue grill over direct heat.
- 2. Place the blade steak in a deep barbecue dish and add the remaining ingredients, cutting the vegetables and potatoes into large pieces.
- 3. Cover the dish tightly with aluminum foil and let it cook at an indirect temperature of 150 degrees Celsius for 4 hours in a closed barbecue.
- 4. Remove from the barbecue, take the blade steak out of the braising liquid, and cook it down into a thick gravy, slice the blade steak and place it in the gravy with the vegetables.
- 5. Finish with finely chopped parsley.
