Smokey Country Style Ribs
Tasty sweet, smoked Ribs with potato skewers

Ingredients

For 4 people:
2 pieces Country Style Rib
BBQ Rub of your choice (for example NOSKOS the Sparerib)
Smoked wood to your own taste

For the Mop sauce:
6 tbsp NOSKOS the Original BBQ Sauce (or a sauce of your choice)
2 tbsp agave syrup
2 tbsp apple cider vinegar

For the baby potatoes au gratin:
500 gr Potato baby potatoes
4 tbsp sunflower oil
100 gr grated parmesan
2 tsp Onion powder
2 tsp Chili powder
sea salt

Preparation

Preparation method ribs:
1: Remove the crabs from the package and let them come to room temperature.
2: Cut the crabs along the bone into slices to create a kind of spare rib.
3: Sprinkle the ribs with rub on both sides.
4: Meanwhile, heat the bbq to 120°C indirect smoking.
5: When the BBQ is up to temperature, put the ribs on top and smoke ribs for 1-1.5 hours
6: lubricate them every 20 minutes with the mop sauce
7: after 1.5 hours, increase the bbq to 150-160 degrees and cook to a core temperature of about 90 degrees

For the bantam skewers
:
1: wash the baby potatoes and put them in a saucepan. Bring them to a boil and drain immediately when they cook. Let them evaporate.
2: Put the baby potatoes in a bowl and add the onion powder, chili powder, grated parmesan and oil and mix it together.
3: String the baby potatoes on a satay skewer and place the skewers on the bbq with the country ribs. Grill until fully cooked
4: when the ribs have reached the core temperature, lubricate them again with your favorite bbq sauce. We used NOSKOS the Original BBQ Sauce for this
5: make a fresh salad and your own aioli.
