Blending the earthiness of smoked ancho chilies and the smokey heat of chipotle chilies with the sweetness of apple juice, tamarind, and brown sugar, this barbecue-centric brine concentrate accentuates the flavour of beef while producing tender, juicy brisket. When smoking brisket for long periods of time, meat runs the risk of drying out. Brining provides a margin for error by helping the meat hold on to its natural juices longer and at higher temperatures, marinades do not. For an excellent bark, strain the used brine through a mesh colander to catch the spices in the brine. Re-apply these as a wet rub prior to smoking.
For normal brining, we recommend a brining time of 1 hr per lb. Instructions are on the bottle. Dilute the brine 6:1 (six parts water, one part brine) to inject brisket or pork butt for competition. For braising brisket, dilute the brine 7:1 to use as a braising liquid or in the slow cooker. For vacuum tumbling or brining times longer than 1 hour per pound, dilute 6:1.
