Use in combination with Porky White Chick or layer with Moo Mami to enhance the umami effect, or even Sweet Bones & Butts. Smoke your meat low and slow or hot and fast to achieve the desired color on the bark.
Wrap the meat in foil or similar peach paper to cook in the flavors and tenderize the bark. Add the glaze towards the end or even add some to the foil juice for maximum impact. Open the foil 30-40 minutes before removing it from the smoker and apply layers of the glaze that make the meat so sticky and delicious.
