The Inside Skirt is a nice piece to cook in its entirety. The meat has a grove, tender structure with a lot of taste. The Inside Skirt is cut from the diaphragm. It looks a little like the flak steak, but it is different. The Skirt Steak is rectangular piece, while the flank steak has the shap of a half moon. The skirt steak is used in the Cuban Churrasco and also in the Chinese stir-fries. Skirt steak needs to be cut transverse to the wire.
