Preheat the oven to 200°C.
For the best result, coat the Wellington with egg yolk before placing it in the oven.
Take an egg yolk and whisk it thoroughly until smooth and ready for brushing. Use a basting brush to evenly coat the Wellington. See an example in the photo gallery.
Place the thawed Beef Wellington on baking paper on your oven tray or in a baking dish—not on the rack.
A meat thermometer is essential. The Beef Wellington is ready when the internal temperature of the meat reaches 45°C. This typically takes 30–50 minutes, but checking is key!
Let it rest for 10 minutes afterward. The meat will continue to cook slightly, allowing you to slice it perfectly medium-rare.
BBQ
Prepare the BBQ for indirect cooking at 210°C. Use a pizza stone with a layer of baking paper on top for the best result.
