The initiators of the Hamburg-America Line, Alber Ballin and Edwin Carr, believed that passengers should arrange kosher, nutritious meals themselves, which could be prepared quickly. Ground meat was salted to extend its shelf life. It was then rolled into a ball and stored. Before preparation, it was flattened and fried in a pan. This meal was renamed "hamburger meat."
