  • 12-15 wooden or metal skewers
  • 2 spring onions, cut into 2.5 cm pieces (optional)

For the yakitori sauce:

  • 120 ml of soy sauce
  • 120 ml of mirin (sweet rice wine)
  • 60 ml of sake (Japanese rice wine)
  • 2 tablespoons of sugar
  • 2 cloves of garlic, finely chopped
  • 1 teaspoon of grated ginger

  • 1. Prepare the wooden skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning on the grill.
  • 2. Make the yakitori sauce. Combine the soy sauce, mirin, sake, sugar, garlic, and ginger in a small saucepan.
  • 3. Bring the mixture to a boil over medium heat.
  • 4. Reduce the heat and let the sauce simmer for about 10-15 minutes until it slightly thickens. Remove from heat and let it cool.
  • 5. Place the chicken cubes in a bowl and add half of the cooled yakitori sauce.
  • 6. Marinate the chicken for at least 30 minutes in the refrigerator. The longer you marinate, the more intense the flavor will be.
  • 7. Thread the marinated chicken cubes onto the skewers, alternating with pieces of spring onion if using.
  • 8. Preheat a grill or grill pan over medium-high heat.
  • 9. Grill the skewers for about 8-10 minutes, turning them regularly and basting them with the remaining yakitori sauce while grilling.
  • 10. The chicken should be cooked through and slightly caramelized.
  • 11. Remove the skewers from the grill and serve them warm with extra yakitori sauce on the side for dipping.
