Preparation

Laat de picanha op kamertemperatuur komen. Snij vervolgens de vetkap kruislings in tot en met het onderliggende vlies. Kruid de picanha naar eigen smaak rondom. Gaar de picanha op middelhoog vuur tot een kerntemperatuur van ongeveer 47-48 graden. Grill vervolgens de picanha op hoog vuur aan beide kanten tot het rondom een mooie kleur heeft.

(Let op: het is mogelijk dat door druipend vet steekvlammen ontstaan. Zorg voor de juiste kleding, hulpmiddelen en hou zo veel mogelijk afstand)

Hou een kerntemperatuur aan van ongeveer 52-54 graden. Laat de picanha ongeveer 10 minuten rusten tot een uiteindelijke kerntemperatuur van 55-57 graden (Medium-Rare) of 57-60 graden (Medium).
