
Chipotle Coffee Roadkill Chicken

Ingredients
For approx. 5 people
1 pc Whole Gildehoen chicken
40 gr Butter
Coffee bbq rub:
1,5 tbsp Fresh coffee
1 tbsp Smoked paprika
2 tbsp Dark caster sugar
1 tbsp Sea salt
1 tsp Chili flakes
1 tsp Garlic
1 tsp onion powder
1/2 tsp coriander ground
Chipotle butter glaze:
60 gr Butter
2 tbsp Chipotle hot sauce
1/2 pcs Lime (juice)
Preparation
1: Butterfly the chicken. Do this by placing the chicken with the fillet on the table. Then cut along both sides of the spine with scissors and remove it. Open the chicken and turn over.
2: Spread the chicken with butter and the dry rub.
3: Heat the bbq to 190 °C.
4: Melt the butter for the butter glaze and mix with the chipotle sauce and the lime juice.
5: Grill the chicken indirectly and lubricate it with the butter glaze every 20 minutes.
6: The chicken is ready when it has reached an internal temperature of 75 °C.
7: Let the chicken rest for another 15 minutes and eat with the Caesar salad & cornbread.
