Wagyu Short Ribs
Delicious recipe for our Wagyu Short Ribs.

Ingredients

For approx. 4 people
2 Wagyu short ribs
2 cups of red wine
1/2 cup carrots, sliced
1/3 cup onions, diced
1/4 cup celery, sliced
1/2 cup mushroom garnish
A quarter liter veal fond
2 large, ripe tomatoes, diced
1 orange, sliced
salt and pepper

Preparation

1: Sear the ribs in a pan with some olive oil, over high heat until brown. Remove the ribs from the pan and set aside.
2: In the same pan, add carrots, onions and mushrooms. Cook them until the onions are caramelized.
3: Add the celery, tomatoes and orange in the pan and deglaze it with the red wine. After the red wine is reduced by half, add the fond. After all this is boiling, remove the pan from the heat and put the ribs in the pan. Cover the pan and let it simmer in the oven at 110 degrees for 5 hours.
4: Remove the ribs from the pan. Let the cooking liquid thicken into a sauce and serve over the short ribs. Serve with the sifted vegetables.
