Vaca Atolada (Brazilian Short Ribs)
A delicious recipe for a complete menu. Traditional Brazilian dish!

Ingredients

For approx. 10 people
1 kg Wagyu of USA Short ribs
2 onions, finely chopped
4 cloves garlic, finely chopped
2 tablespoons olive oil
5 tomatoes, without flesh and finely chopped
1 tablespoon vinegar
1 bunch of fresh parsley, finely chopped
1 kg cassava (yuca carrot cut into cubes)
Salt and pepper

Preparation

1) Mix the garlic, onion and some olive oil together and season with salt and pepper. Lubricate the ribs with this.
2) Set the BBQ to 200 degrees Celsius and grill the ribs on both sides until golden brown. This can also be done in a grill pan.
3) Put the ribs together with the tomatoes, vinegar and parsley in a deep dish, add water if necessary so that the whole thing is under water and put back on the BBQ. If you use a grill pan, you can use a preheated oven of 200 degrees for this. Let it boil for 20 minutes.
4) Now add the cassava and possibly some water, salt and pepper and let it cook for another 40 minutes until the cassava is nice and soft in structure.

 

Serve as hot as possible! You can also serve a nice spicy salsa with it.
