Sweet-spicy Chicken Thigh Pinwheels
Nice, slightly spicy BBQ snacks from Holland chicken thigh meat

Ingredients

For the sauce:
1 Large red pepper
300 grams sugar
60 ml apple cider vinegar
1 tablespoon salted butter
1 tablespoon Smokin' Guns BBQ Sweet Heat Rub

Requirements:
Cocktail skewers
Core temperature probe

Preparation

1: Remove the seeds and stem from the bell pepper, cut into pieces and grind together with the other ingredients for the sauce.
2: Bring to a boil in a saucepan, lower the temperature and let it simmer gently for about 15 minutes.

Now you can prepare the pinwheels 
Set up your BBQ for direct heating at a temperature of approx. 190 degrees

1: Cut the thigh meat lengthwise into strips of 2.5 cm thick.
2: Place the bacon slices on a cutting board, with a bar of thigh meat on top.
3: Make a roll (pinwheel) and secure with the cocktail sticks.
4: Sprinkle both sides with the rub.
5: Grill the pinwheels for 6 to 8 minutes on both sides to a core temperature of 73 degrees. Serve on a nice bowl and dip the pinwheels in the sauce
