Brazilian BBQ Chicken skewers
Nice fresh recipe for chicken skewers with Dutch Gildehoen

Ingredients

Serves 4
1000 grams of chicken thigh meat without bone
iron or wooden skewers

For the tomato salad:
100 gr bacon, cut into fine cubes
500 gr fresh tomatoes, cut into fine cubes
1 tbsp Dijon mustard
100 gr blue cheese, crumbled
1 white onion, finely chopped
1 dl olive oil
1 dl white balsamic vinegar
1/2 bunch of chives, finely chopped
1 clove garlic, finely chopped or pressed
sea salt
black pepper

Marinade for the skewers:
1 lime juice + grated
250 ml low-fat yogurt
1 clove garlic, finely chopped or pressed
35 gr parmesan, grated
2 tbsp olive oil
sea salt

Preparation

Tomato salad:
1: Put a pan of water on the fire and bring it to a boil.
2: Make a cross at the bottom of the tomato with a knife and remove the crown from the tomato with a small knife.
3: Now immerse the tomatoes in the boiling water for 20 seconds and then put them directly in a container with ice-cold water.
4: Now remove the skin from the tomato.
5: Cut the tomato into quarters and remove the flesh. Cut the tomato into beautiful fine cubes.
6: Fry the bacon in a tablespoon of oil until golden brown and keep separate for a while. Use the same pan to fry the onion.
7: Now add the garlic and fry for a while. Now add the mustard and bake with it.
8: Deglaze with the balsamic vinegar and mix everything well, pour into a mixing bowl and let cool.
9: Now add the diced tomatoes, chives & three quarters of the bacon. Season with sea salt & pepper.
10: Put the tomato vinaigrette in a nice serving bowl and finally add the remaining bacon and the blue cheese on the vinaigrette.
11: Garnish with some chives.

Marinating and grilling the skewers:
Set the bbq to grill directly at 180 C°.
1: For the marinade, mix all the ingredients together.
2: Cut the chicken thighs into coarse cubes and mix this with the marinade.
3: Now thread the skewers
4: Let the skewers marinate for an hour.
5: Grill the skewers for about 3-4 minutes on each side.
6: Serve the skewers with the tomato salad.

Tip: for some extra freshness, serve a wedge of lime!
