Brisket burger on a homemade Panini bun with Chianti-Ketchup

Homemade sandwiches and homemade ketchup in combination with a delicious Brisket burger.

Ingredients

Irish Brisket burger

The bread (Milk panini)
10 grams of dried yeast
20 grams caster sugar
50 grams butter
250 grams flour
95 ml milk
1 egg, scrambled
1 tablespoon sesame seeds

The Chianti Ketchup
500 ml tomatenpasta
200 ml red wine vinegar
0.2 grams caster sugar
150 ml Chianti (Red wine)

Preparation

Irish Brisket Burger

The Chianti Ketchup
1) Add all ingredients together in a pan.
2) Bring to a boil while stirring
3) Simmer for 45 minutes, stirring occasionally.  After 45 minutes of stirring occasionally, the paste becomes thick. 

Panini
1) Put the yeast and flour together in a bowl. Add 60 ml of lukewarm water.
2) Stir this until it foams. Then add the rest of the flour, sugar and milk. Then add another 1 teaspoon of fine sea salt.
3) Mix this into a paste, add the butter last.
4) Set aside for 1 hour, the dough will expand.
5) Preheat the oven to 180 degrees.
6) Divide the dough into 4 equal pieces and make oval shapes.  Cut a notch on the top of the loaves of bread.
7) Place the paninis on baking paper and put them in the oven for 1 hour.
8) Remove the paninis from the oven and spread them with the cracked egg for a nice brown layer. Sprinkle the sesame seeds over it and place the paninis back in the oven for 25 minutes.

The burger
1) Heat a frying pan with olive oil.
2) Add the citizens.
3) Bake for 3-4 minutes on both sides for medium-rare.
4) Before serving, let it rest with olive oil. Serve the burger on the panini, with salad and the Chianti ketchup
