Stuffed Italian chicken breast with Pancetta
A tasty alternative with chicken breast. Delicious Italian touch with this recipe.

Ingredients

2 heavy chicken breast, halved
8 sun-dried tomatoes
Fresh basil leaves
2 pieces of Mozzarella in slices
4 slices Pancetta
2 tablespoons lime juice
3 tablespoons olive oil
Fresh salt and pepper

Preparation

1) Wash the fillet with water and vinegar and pat it dry.
2) Cut open the fillet on the side so that it can be filled. Crush possibly with a knife to get a larger surface area.
3) Place the different ingredients in the middle of the sliced fillet. The Pancetta on the bottom, then the slices of mozzarella, then the sun-dried tomatoes and finally the basil. Sprinkle some salt and pepper over it to taste.
4) Roll up the fillets and close them using butcher's rope or wooden skewers.
5) Marinate the stuffed chicken breast in the olive oil and lime juice.
6) Heat the grill pan or BBQ to about 200 degrees. Grill the stuffed fillets on both sides for 5-6 minutes until the meat is well cooked.

Serve with whole corn on the cob.
