Ingredients

For 4 people

4 strands spareribs
1 dash water
Marinade
4 cloves garlic
3 onions
3 tbsp fresh ginger
1 tbsp sambal oelek
2 dl ketjap manis
4 tbsp gingersyrup
2 tbsp lemon juice

How to make

1: Skin the spareribs, this is done the easiest way with a paper towel
2: Crush the garlic, cut the onion into thin rings and cut the ginger into thin slices. Mix all the ingredients for the marinade, pour it over the spare ribs and let them marinate for at least 2 hours, but a whole night is even better for the taste.
3: Heat the barbecue to about 150°C.  Set up the barbecue for indirect cooking.
4: Put the spare ribs on the side without coals (the indirect part) with the meat side up. Always lubricate the meat side with the remaining marinade. After about 1.5-2 hours, the spare ribs are nicely brown in color and can be removed. If you want, you can of course also add smoke wood during this first cooking for an extra smoky taste.
5: Remove the ribs from the barbecue, wrap them in aluminum foil and add a splash of water. Then put them back on the barbecue. Depending on the thickness, they now take about 45-60 minutes to cook.
6: The spare ribs are ready when the meat almost detaches from the bones. Enjoy your meal.
